Buffalo Shrimp Baked Potato with Blue Cheese Cream

*** Ingredients

1 pkg. Phillips Buffalo Shrimp
2 large Idaho potatoes
¼ c. sour cream
1 Tbsp. mild blue cheese, crumbled
1 Tbsp. fresh chives or scallion, minced

*** Preparation Instructions

  1. Preheat oven to 400°F.
  2. Scrub potatoes, dry, rub with oil and coarse salt, if desired. Pierce with a fork to let steam escape. Bake approx. 45 minutes – 1 hour or until tender. Split open and fluff.
  3. Blend sour cream and blue cheese. Chill until ready to serve.
  4. Cook shrimp according to package directions.
  5. Place shrimp and sauce over each potato. Drizzle with blue cheese cream and 1½ tsp. either chives or scallion.
