1 pkg. Phillips Buffalo Shrimp
2 large Idaho potatoes
¼ c. sour cream
1 Tbsp. mild blue cheese, crumbled
1 Tbsp. fresh chives or scallion, minced
*** Preparation Instructions
- Preheat oven to 400°F.
- Scrub potatoes, dry, rub with oil and coarse salt, if desired. Pierce with a fork to let steam escape. Bake approx. 45 minutes – 1 hour or until tender. Split open and fluff.
- Blend sour cream and blue cheese. Chill until ready to serve.
- Cook shrimp according to package directions.
- Place shrimp and sauce over each potato. Drizzle with blue cheese cream and 1½ tsp. either chives or scallion.
