Sweet and Sour Pork A Popular New Years Dish for Hopeful Grandparents "Sweet and Sour Pork"

Ingredients:
  • 3/4 pound pork tenderloin
  • 2 - 3 teaspoons soy sauce
  • Pinch of cornstarch
  • Sauce:
  • 1/4 cup sugar
  • 2 tablespoons ketchup
  • 2 tablespoons dark soy sauce
  • 1/4 teaspoon salt
  • 1/2 cup water or reserved pineapple juice
  • 1/4 cup vinegar
  • 1 tablespoon cornstarch dissolved in 4 tablespoons water
  • Batter:
  • 1/3 cup flour
  • 1/3 cup cornstarch
  • 1 egg white, lightly beaten
  • 1 tablespoon vegetable oil
  • 1/3 cup warm water, as needed
  • Other:
  • 1 carrot
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 1/2 cup pineapple chunks
  • 3 cups oil for deep-frying, or as needed
Preparation:
Directions for sweet and sour pork
Cut the pork into 1-inch cubes. Marinate in the soy sauce and cornstarch for 20 minutes.

To prepare the sauce, in a small bowl, combine the sugar, ketchup, dark soy sauce, salt, water or juice and vinegar. Set aside. In a separate bowl, dissolve the cornstarch in the water. Set aside.

Peel the carrot and chop on the diagonal into 1-inch pieces. Cut the bell peppers in half, remove the seeds and cut into cubes.

Heat the oil for deep--frying to 375 degrees Fahrenheit.

For the batter, combine the flour and cornstarch. Stir in the egg white and vegetable oil. Add as much of the warm water as is needed to form a thick batter that is neither too dry or too moist. (The batter should not be runny, but should drop off the back of a spoon).

Dip the marinated pork cubes in the batter. Deep-fry in batches, taking care not to overcrowd the wok. Deep-fry the pork until it is golden brown. Remove and drain on paper towels.

(If desired you can deep-fry the pork at second time to make it extra crispy. Make sure the oil is back up to 375 before you begin deep-frying again).

To prepare the sweet and sour sauce, bring the sauce ingredients to a boil in a small saucepan over medium heat. Add the carrot, green pepper, and pineapple. Bring to a boil again and thicken with cornstarch mixture, stirring. Check the sauce one more time and adjust seasonings, adding salt and/or vinegar if desired. Serve hot over the deep-fried pork. Serve the sweet and sour pork over rice.

Veggie Egg Foo Yung

In this Chinese version of an omelet, the fillings are mixed with the egg prior to cooking, not added in the pan. Fermented bean curd, available in Chinese/Asian markets, adds its own intense flavor. (Note: the two main types of bean curd are red and white: I used a cube of white fermented bean curd when preparing this dish).

Lightly cooking vegetables by blanching or sautéing prior to combining with the egg mixture helps coax out their natural flavors. However, if you prefer a crisper texture and higher nutrient content, feel free to skip this step. Another option is to top the egg foo yung with an assortment of raw veggies such as bean sprouts and red and green bell peppers.

Yield: Serves 4

Ingredients:

  • 1/2 red bell pepper
  • 1 cup mung bean sprouts
  • 6 eggs
  • 1/4 teaspoon salt (Guide Note: or to taste)
  • 1/8 teaspoon pepper (Guide Note: or to taste)
  • 1 teaspoon Chinese rice wine or dry sherry
  • 1/2 teaspoon sugar
  • 4 mushrooms, thinly sliced
  • 1 green onion, thinly sliced
  • 1 cube fermented bean curd, mashed
  • 2–4 tablespoons oil

Preparation:

1. Remove the seeds from the red pepper and cut into chunks. Blanch the bean sprouts by plunging them briefly into boiling water, and drain.

2. Lightly beat the eggs. Stir in the salt, pepper, rice wine, and sugar. Add the vegetables and mashed bean curd. Mix well.

3. Add 2 tablespoons oil to a preheated wok or skillet. When the oil is hot, add a quarter of the egg mixture. Cook until the bottom is cooked, then turn the omelet over and cook the other side. Continue with the remainder of the mixture, making four omelets. Serve with an egg foo yung sauce or soy sauce. (Note: you'll find several ideas for making a sauce in the recipes below: a simple sauce can be made by bringing 1 cup chicken stock or broth and 2 tablespoons light soy sauce to a boil, then thickening with 1 tablespoon cornstarch dissolved in 1 tablespoon water. Season with pepper to taste).

Broccoli Chicken

Chicken breasts are velveted and then combined with broccoli in an oyster-flavored sauce. Broccoli Chicken serves 2 - 4.

Ingredients:

  • 3/4 - 1 pound boneless, skinless chicken breasts
  • To Velvet Chicken:
  • 1 large egg white
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • Sauce:
  • 2 tablespoons oyster sauce
  • 1 tablespoon light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon water
  • To Cook Broccoli:
  • 1 pound broccoli
  • 1/2 cup water
  • 1/4 teaspoon salt, or to taste
  • 1/2 teaspoon granulated sugar, or to taste
  • Other:
  • 2 garlic cloves
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • 2 cups plus 4 tablespoons vegetable or peanut oil, for frying

Preparation:

1. Cut the chicken into 3/4 to 1-inch cubes. In a bowl, mix together the egg white, cornstarch and salt. Add the egg white mixture to the chicken cubes, tossing or using your fingers to coat the chicken in the mixture. Marinate the velveted chicken in a sealed container in the refrigerator for 30 minutes.
2. While the chicken is marinating, prepare the sauce and vegetables: for the sauce, mix together the oyster sauce, light soy, dark soy, and water in a small bowl and set aside. In another small bowl, mix the cornstarch and water thickener and set aside. Wash and drain the broccoli. Cut the stalk diagonally into thin slices. Cut the flowerets into 3 or 4 pieces. Crush the garlic.
3. Preheat a wok. Heat 2 cups oil in the wok until it reaches 275 degrees Fahrenheit. (Test the heat by placing a piece of chicken in the wok - it should float). Add the chicken cubes, and let cook until they just turn white (about 30 seconds), using a wooden spoon or chopsticks to gently separate them. Quickly remove the chicken cubes from the wok as soon as they turn white, and drain in a colander or on paper towels.
4. Drain the oil out of the wok or preheat a second wok on medium high to high heat. Add 2 tablespoons oil. When the oil is hot, add the crushed garlic and stir fry for 10 seconds.
5. Add the broccoli, sprinkle the salt and sugar over, and stir fry briefly, turning down the heat if necessary to make sure it doesn't burn. Add the 1/2 cup water, and cook the broccoli, covered, for 4 - 5 minutes, until it turns a bright green and is tender but still crisp. Remove from the wok and drain.
6. Clean out the wok and heat 2 more tablespoons oil. Add the broccoli and the velveted chicken, stirring and tossing to cook the chicken through. Add the sauce and cornstarch mixture in the middle of the wok and stir quickly to thicken. Mix everything together and serve hot over steamed rice.

Eggplant in Garlic Sauce

A popular feature at Szechuan restaurants, Eggplant in Garlic Sauce consists of chunks of eggplant and ground pork that are braised in a garlicky sauce. This dish gets its heat from chili garlic sauce, available at Asian/Chinese markets. The eggplant is Chinese eggplant, a long, thin eggplant that is usually purple in color and often has a white streak.
The only tricky part to making Eggplant in Garlic Sauce comes when it's time to cook the eggplant. If you've ever fried eggplant, you'll know it loves to soak up oil! To get around this problem, in this recipe the eggplant is partially cooked in boiling water before being added to the pork and seasonings in the wok. However, I’ve included instructions for stir-frying the eggplant if you want to prepare it in a more traditional way.
Here are the ingredients you'll need to make Braised Eggplant in Garlic Sauce:

  • 2 medium Chinese eggplant (about 10 - 11 ounces)
  • 2 teaspoons minced garlic
  • 1 teaspoon minced ginger
  • 1 green onion (spring onion, scallion) white and green parts, finely chopped
  • Sauce:
  • 1 1/2 TB (4 1/2 tsp) dark soy sauce
  • 1 1/2 TB (4 1/2 tsp) light soy sauce
  • 1 TB Chinese red rice vinegar, balsamic vinegar or red wine vinegar
  • 1 TB Chinese rice wine or dry sherry
  • 1/2 teaspoon granulated sugar
  • 1/3 cup chicken broth
    Other:
  • 3 – 4 TB ground pork (no more than 1/4 cup)
  • Black pepper, pinch
  • 1/4 tsp cornstarch
  • 1 TB vegetable or peanut oil for stir-frying
  • 1 TB chili garlic sauce
  • 1 tsp. cornstarch mixed with 1 TB water

Roast Chicken Recipe

Chinese Recipe and How to make that:

Cook Time: 1 hour, 30 minutes
Total Time: 1 hour, 30 minutes
Ingredients:
  • 1 roasting chicken, 3 to 3 1/2 pounds
  • Marinade;
  • 2 scallions (spring onions, green onions)
  • 1 cup dark soy sauce
  • 2 tablespoons crushed rock sugar, if available, or 2 tablespoons granulated sugar
  • 1 teaspoon five-spice powder
  • 2 - 3 slices ginger
Preparation:
Clean the chicken and pat dry with paper towels. Chop the scallions into thirds, lightly smashing the white sections.

For the marinade, combine the dark soy sauce, rock sugar or granulated sugar, five-spice powder, ginger and the chopped scallions. Place the chicken in a large bag and add half the marinade. Reserve the remaining half of the marinade to baste the chicken during cooking. Marinate the chicken in the refrigerator for at least 4 hours (preferably all night) turning the bag occasionally so that all the chicken is coated in the marinade.

Preheat the oven to 450 degrees Fahrenheit (232 degrees Celsius, gas mark 8). Place the chicken on a rack in a roasting pan. Roast for 15 minutes. Reduce the heat to 375 degrees Fahrenheit (190 degrees Celsius, gas mark 5). Roast the chicken, basting frequently with the reserved marinade, for another hour or until it is cooked. (To check for doneness, pierce the chicken in the thickest part of the thigh. The juices should run clear. If using a meat thermometer, the temperature should read 170 degrees Fahrenheit (76 degrees Celsius) in the thickest part of the thigh.

Let the roasted chicken sit for 15 minutes before serving.
