Easy Meringue Cookies Recipe (Vietname)

Ingredients : Makes 60 cookies
90 g
1/4 teaspoon

250 g
1 teaspoon
Flour
Baking powder
Egg whites
Sugar
Lemon zest
Method :
  • Preheat oven to 190oC (375oF). Sift together flour and baking powder then set aside.
  • Beat egg whites until they are slightly stiff.
  • Gradually add sugar and continue beating until stiff peaks form.
  • Fold in flour mixture to form a batter. Add lemon zest.
  • Drop rounded teaspoonfuls of the batter onto greased and floured baking trays. Bake in preheated oven for 8-10 minutes or until the tops of the cookies become light brown.
  • Loosen immediately from the baking trays so that cookies don't stick.
  • Cool, then store in airtight containers.
